Pumpkin Pie Protein Overnight Oats are the perfect cozy fall breakfast. This healthy oatmeal recipe is made with oats, pumpkin purée and collagen.

Overnight oats are a healthy breakfast go-to of mine. They are so easy to make and great to prepare in advance. You have no excuse for why you didn't eat breakfast! Prep these oats as far as five days in advance.
PRO TIP! If you have an almost empty nut butter jar, make the oats in the jar. This way, you can scrape all the nut butter off the sides and it makes for easy clean up! I know, I'm always making your life a little easier. 😉

Ingredients in Pumpkin Pie Protein Overnight Oats
- old fashioned rolled oats, gluten free if necessary
- ground flaxseed
- pumpkin pie spice
- vanilla collagen powder - if you use unflavored collagen, you may want to add a little sweetener like pure maple syrup
- pumpkin purée (NOT pumpkin pie filing)
- mashed spotty brown banana - the more brown the banana, the sweeter the oats 🙂
- unsweetened almond milk
- toppings of choice - I used Greek yogurt and chopped pecans

I recommend letting them soak overnight, but if you really can't wait that long, allow them to soak for 4 hours before enjoying.
Store oats in an airtight container in the refrigerator for up to five days. Please note that they will soften more and more each day.

Pumpkin Pie Protein Overnight Oats
Ingredients
- ½ cup old fashioned rolled oats, gluten free if necessary
- ½ tablespoon ground flaxseed
- ½ teaspoon pumpkin pie spice

- ¼ cup pumpkin purée (NOT pumpkin pie filing)
- ½ mashed spotty brown banana - the more brown the banana, the sweeter the oats 🙂
- ½ cup unsweetened almond milk
- toppings of choice - I used Greek yogurt and chopped pecans
Instructions
- Combine all ingredients except for the toppings in a bowl.
- Pour the mixture into a jar with a lid or an airtight container. Store in the fridge.
- The next morning, top with desired toppings!
- This recipe makes one serving, but you can easily double, triple or quadruple it to prep your breakfast for the whole week!

Hi Krista - I’m making a big batch of this recipe for 30 servings. Do you think I can put it all in large Mason Jars and then scoop it ou in to cups in the morning and then people can put their own toppings on it?
