This Egg Roll in a Bowl recipe is basically a healthy egg roll stir fry. If you love egg rolls, you will adore this tasty egg roll inspired wrapper-free version. It's made with super simple ingredients and filled with veggies.

- ground turkey - I recommend a percentage around 93%. I don't recommend using 99% lean. The meat will be dry.
- sesame oil - Sesame oil has the best flavor for this recipe. Don't use another oil in place of it.
- garlic - A little fresh garlic makes everything better!
- scallions - For in the bowl and for garnish!
- mushrooms - You can use your favorite variety of mushrooms.
- coleslaw mix - If you can't find the mix, use a combination of shredded green and red cabbage with carrots.
- ginger powder, garlic powder, salt and pepper - The perfect mixture of spices.
- low-sodium soy sauce - You can also use tamari or coconut aminos.
How to make Egg Roll in a Bowl?

- Cook the ground turkey in 1 tablespoon of sesame oil on medium heat, breaking up the meat with a spatula for about 6 minutes, or until the turkey is no longer pink.
- Be sure to season the meat with a pinch of salt and pepper.
- Remove the cooked turkey from the pan and set it to the side in a bowl.
- Brown garlic in 1 tablespoon of sesame oil for about 1 minute on medium heat.
- Add in scallions, mushrooms, coleslaw mix, ginger powder, garlic powder, salt and pepper and cook for 5-7 minutes on medium heat.
- Add cooked ground turkey back into the pan with ½ tablespoon more of sesame oil and the soy sauce.
- Combine and cook for about 2 minutes.
Serve it as is or over rice. I added some fresh scallion, sesame seeds and Sriracha over the top.
Recipe pro-tips:
- Don't use 99% lean ground turkey. It will be dry.
- Don't add too much salt. I add a pinch when cooking the meat and when cooking the vegetables. Soy sauce is already salty.

- ¼ cup low-sodium soy sauce - You can also use tamari or coconut aminos.
