- cottage cheese - Use a higher fat cottage cheese because lower fat varieties can make the egg bake watery.

- chopped fresh spinach - I don't recommend using frozen spinach because of the excess water.

Expert tips:
- Ensure that all the eggs are broken up and well whisked. You don't want a cooked egg yolk in the middle of the egg and cottage cheese bake.
- Chop the spinach so there aren't large pieces of spinach taking over the egg bake.
- Spray the baking dish well to keep the eggs from sticking.
- 9x13 or 9×9 baking dishes both work well for this recipe. It doesn't matter if the dish you're using is round or square.

- cheeses - feta, goat, mozzarella, parmesan, monterey jack, swiss, and gruyère
- meats - cooked turkey sausage, cooked bacon, prosciutto, cooked pancetta, and ham

Cottage Cheese Egg Bake is fluffy, delicious and easy to make. Just one piece of this egg bake has 15 grams of protein!
Ingredients
- 12 eggs
- 1 cup cottage cheese - The higher the fat percentage, the better. Lower fat varieties can make the egg bake watery.
- 1 cup shredded cheddar cheese
- 2 ½ cups chopped fresh spinach
- ¼ teaspoon sea salt
- ¼ teaspoon ground black pepper
- 4 sprays olive oil spray
Instructions
- Preheat the oven to 350 degrees F. Spray a 9x13 or 9×9 baking dish well with olive oil spray and set it aside.
- In a large bowl, whisk all ingredients until combined.
- Pour the egg mixture into the baking dish and bake at 350 degrees F for 45-55 minutes. You will know it's done when the center is firm. It should not be jiggly.
- Let it cool for at least 10 minutes before slicing into 8 pieces and enjoying.
