Blueberry Lemon Overnight Oats
This overnight oatmeal recipe is one of my current favorites! Made with oats, vanilla protein powder, chia seeds, almond milk, fresh blueberries, lemon zest, coconut and Greek yogurt.
After creating a few blueberry lemon recipes, I realized it's one of my favorite flavor combinations. The bright and springy lemony flavor really stands out against the sweetness of the blueberries. Check out my Baked Lemon Blueberry Donuts or Lemon Blueberry Baked Oats!
Ingredients in this Overnight Oats Recipe
- old fashioned rolled oats (gluten free, if necessary)
- vanilla protein powder (I used whey protein)
- chia seeds
- unsweetened almond milk
- fresh blueberries
- lemon zest
- unsweetened shredded coconut
- plain Greek yogurt
How do I make overnight oats?
- Add oats, protein powder, chia seeds, almond milk, blueberries and lemon zest into a small container.
- Place the lid on top of the container and ensure it's secure. Shake the mixture well.
- Put the container in the refrigerator and let it sit overnight.
- The next morning, top the oatmeal with Greek yogurt, fresh blueberries, lemon zest and shredded coconut.
- Enjoy! This recipe makes one serving, but you can easily double, triple or quadruple it to prep your breakfast for the whole week!

- 1 tbsp lemon zest (plus ½ tbsp more more for topping)
- ½ tbsp unsweetened shredded coconut
- ¼ cup plain Greek yogurt
