Kefir Pancakes: SO light and airy!! One of my new Kefir Pancakes: SO light and airy!! One of my new favorite pancake recipes. You HAVE TO try!

SAVE for later. 💛
Recipe ⬇️

- ¾ cup gluten free oat flour
- 1 tsp baking powder
- ½ tsp cinnamon
- ¼ tsp cardamom 
- ⅓ cup unsweetened applesauce
- 1 ½ tbsp maple syrup
- 1 egg
- ½ cup Plain Unsweetened @lifewaykefir - (adds protein and gives the pancakes a light + airy texture!)
- 1 tsp coconut oil – (for greasing the pan)

1. Whisk together all the ingredients for the pancake batter.
2. Heat a pan on medium and add coconut oil.
3. Use a ¼ cup scoop and pour the batter onto the pan.
4. Cook the pancakes for about 2-3 minutes per side. You may have to adjust the heat. If the pancakes aren’t cooking fast enough, increase the heat. If the pancakes are starting to brown too quickly, lower the heat.
5. Serve with your favorite toppings!

I used to think there was a direct correlation bet I used to think there was a direct correlation between how much I worked and my success. I thought the harder I pushed, the more “successful” I would be. Turns out, the harder I pushed, the faster I would burnout, become less motivated, less creative and feel overwhelmed by EVERYTHING on my to-do list.

Let’s stop glamorizing pushing ourselves to our limits. I’m all for working hard, but not when it compromises health and happiness. Know that it’s okay to take breaks and important to do so! Know that you will be more productive, more creative and come back better than ever when you step away.

Recipe:
- 2 scoops @Youtheory Collagen Powder
- ½ cup coconut flour
- ¼ cup unsweetened shredded coconut
- ½ cup creamy natural almond butter 
- 2 tbsp honey
- 2 tbsp cold water 
- 3/4 cup dark chocolate chips
- 1 tsp olive oil

* Start by mixing together all the ingredients for the filling in a bowl until combined.
* Use a 1 ½ tbsp cookie scoop, roll into balls and place into the freezer for 1 hour.
* While they are hardening, melt the chocolate down with olive oil in a saucepan on low heat until completely melted.
* Remove the bites from the freezer, coat in the melted chocolate. Sprinkle some flaky sea salt on top of each ball, if desired.
* Place back into the freezer for 30 minutes and enjoy!
* Store in the fridge. Recipe yields 10 truffles.
