Step 1
First, blend the cottage cheese using a food processor or blender for 30 seconds to 1 minute, or until smooth.
Step 2
Add the blended cottage cheese along with all other ingredients into a bowl and whisk until combined.
Step 3
Heat a waffle iron. I used a mini waffle iron. Obviously, the size of your waffle iron will determine how many waffles this recipe makes.
Spoon about ¼ cup of the batter into the waffle cavity, close the iron and cook for 4-6 minutes.
Step 4
Allow the waffles to cool on a wire rack.
