Easy Healthy Banana Oat Waffles are a simple and delicious breakfast. These waffles are gluten free, low in sugar and freezer-friendly!

These fluffy banana waffles are a must make! I've been focusing so much on pancake recipes that I forgot how yummy waffles are. Waffles can seem more intimidating than pancakes, but I promise that this recipe can't get any easier! I also used a mini waffle iron which makes this recipe more fun!

Ingredients in this recipe

  • mashed spotty-brown bananas (the more ripe the bananas, the sweeter the waffle)
  • honey
  • olive oil
  • egg
  • gluten free oat flour
  • almond flour
  • unsweetened shredded coconut
  • baking powder (gluten-free)

What is the secret to crispy waffles?

If you love toaster waffles, I have a secret for you. Simply place your homemade waffle into the toaster and voila, you have a crispy toaster waffle.

  1. nut butter drizzle
  2. unsweetened shredded coconut
  3. fresh fruit
  4. homemade jelly or jam
  5. seeds (chia seeds, ground flax seeds or hemp seeds)

Do homemade waffles freeze well?

Yes! First, I recommend freezing the cooked waffles individually on a cookie sheet lined with parchment paper. This will keep the waffles from sticking together. Once the waffles are completely frozen, place them in a freezer-friendly bag.

Equipment

  • Waffle Maker

Ingredients
  

  • ½ cup mashed spotty-brown bananas (the more ripe the bananas, the sweeter the waffle) - (about 1 ½ bananas)
  • 1-2 tbsp honey
  • ½ tbsp olive oil - (plus more for greasing)
  • 1 egg
  • ¼ cup + 2 tbsp gluten free oat flour
  • ¼ cup almond flour
  • 2 tbsp unsweetened shredded coconut
  • ½ tsp baking powder (gluten-free)

Instructions
 

  • Whisk together the mashed banana, honey, olive oil and egg in a mixing bowl.
  • Add in the oat flour, almond flour, shredded coconut and baking powder. Mix until combined.
  • Heat and grease a waffle iron. Spoon the batter onto the iron. Cook for the recommended time based on your waffle iron. Allow the waffles to cool on a wire cooling rack.
  • Once cooled, pop the waffles into the toaster to obtain the classic toaster waffle texture. Serve with your favorite toppings!

    I used homemade oat flour and coconut flour so my texture was a bit more grainy. I added a splash of vanilla and almond milk and they were perfect!!!

      I'm glad you enjoyed!! I recommend following the recipe as written for best results. Unfortunately, coconut flour and almond flour don't swap 1:1 since they have different textures. Coconut flour needs more liquid.

          Wow, delicious! I only had regular (sweetened) shredded coconut, and whole wheat flour, and it was still delicious! Thank you for the recipe I was hoping to find a guilt-free-ish solution to my waffle craving, and this one was perfect!!

        So good i replace the mapple syrup by some walnut oil as i can not any sugar. And i did not have almond flour so I use tapioca flour àd it was so tasty and light ! I double the recipe for 4 normal size waffle! Thanks for this recipe
