Healthy Blueberry Banana Oatmeal Breakfast Bars are a delightful meal prep breakfast or snack. They are gluten free, oil free, sweetened with banana and soft baked!

First of all, these baked oatmeal bars are sweetened solely with banana, but taste like cake for breakfast. You can even top these with a drizzle of maple syrup and you got yourself an upgraded pancake!
Simply throw all the ingredients into a bowl, bake and slice into bars. You can keep these in the fridge to have for the week or freeze them and enjoy over time.

How to make baked oatmeal bars?
- Combine all ingredients.
- Place into a baking pan.
- Bake.

Expert Tips
- Use spotty-brown bananas opposed to yellow or green. The darker in color they are, the sweeter they will be. Since all the sweetness comes from the bananas in this recipe, I recommend using VERY ripe bananas.
- If you don't have fresh berries on hand, use frozen.
- This recipe is truly amazing for meal prep. You can store these bars in the fridge for a few days or individually wrap them and place them into the freezer for up to 3 months. In the morning, simply warm a bar in the microwave, add desired toppings and your breakfast is ready!

Healthy Blueberry Banana Oatmeal Breakfast Bars
Ingredients
- 1 cup mashed spotty-brown bananas
- 2 eggs
- 1 ¼ cups unsweetened almond milk
- 2 cups gluten free old fashioned rolled oats
- ¼ cup ground flaxseed
- ½ tablespoon baking powder (gluten-free)
- 1 teaspoon pure vanilla extract
- 1 ½ teaspoon ground cinnamon
- ½ cup fresh blueberries
Instructions
- Mix together all ingredients until well-combined.
- Grab an 8x8 baking pan lined with parchment paper. Spoon the oatmeal mixture into the baking pan. Bake at 400 degrees F for 30-40 minutes.
- Once cooked, allow to cool, slice into bars and enjoy! I topped mine with fresh blueberries and peanut butter.

These are amazing Krista!! <3 And they're the fastest breakfast meal prep for the week. They make the house smell like oatmeal cookies and blueberry waffles (an added bonus). I used frozen blueberries instead of fresh bc I always have frozen in the freezer. To compensate for the extra moisture, I just threw a handful (less than 1/4 cup) extra oats and it worked fine!

Made these breakfast bars over the weekend for this weeks meal prep and they turned out great! I also added in some raspberries and lemon juice/zest from half a lemon. It ended up tasting like a blue/raspberry lemon muffin..... soooo good! It also tasted great reheated the next day as well as eating cold with a little bit of milk, extra berries and slivered almonds. Will definitely be making again, thanks for the great recipe Krista!

Loved these! They are a great breakfast prep and I love that they aren’t overly sweet. If you don’t have an 8x8 pan I’d recommend a larger rather than smaller pan if you want them to turn out like the bars in the photos, as I cooked mine in a smaller rectangular pan and ended up needing to eat them with a fork rather than as a bar. Will definitely be making these again when I have spotty bananas!

I had five medium sized bananas that were going to go bad, so I used all of them. I love that this recipe doesn't use oil. The house smelled like xmas while these were baking. It's nice to have these ready to go in the morning, I just pop them in the microwave for 45 sec. and drizzle a little agave syrup on them and there is breakfast. My 9 year ate all of the bar. I sprinkled some chopped walnuts on mine. These kept me full through my circuit training workout and for a few hours afterward. Thanks for the VERY easy recipe!

So I had mushy bananas and gave this a try. I wanted to double the recipe. These are AMAZING. So delicious! I may have undercooked mine, as it was more of a pudding consistency in the middle, but NO complaints. I added powdered peanut butter and craisins. It is not super sweet, another plus. I drizzled honey on top for my sweet lovers. I ate it warm (yum) and cold (yum). Both ways are so very good! This will be on repeat here.
