- mashed ripe banana
- full fat or light unsweetened canned coconut milk - I don't recommend coconut milk or any other non-dairy milk from the carton for this recipe. It won't be as creamy.
- vanilla extract
- pure maple syrup - You can add more, use less or omit it based on sweetness preference.
- ground cinnamon
- salt
- chia seeds

How to make banana chia pudding:

Mash a ripe banana well in a bowl.
Next, add all the other ingredients to the bowl.
Whisk very well with a fork or a whisk.
Cover and refrigerate for at least 2 hours or up to overnight.
Then, give it one more mix before serving with your favorite toppings.
Recipe pro-tips:
Don't use coconut milk or any other non-dairy milk from the carton for this recipe. It won't be as creamy. Use full fat or light unsweetened canned coconut milk.
If you like your chia pudding more liquidy, add some extra milk.
You can add more maple syrup, use less or omit it based on sweetness preference.
Add protein! You can add protein powder or collagen powder, but you may need to add a little extra milk depending on how thick the powder is.
Whisk the mixture very well otherwise the chia seeds won't gel.
The pudding gels pretty fast. You don't have to wait until the next day to eat it. Give it at least 2 hours though.
Topping Ideas:
- fresh fruit - sliced banana, sliced strawberries, blueberries, etc.
- dried fruit - chopped dates, dried cranberries, etc.
- granola - Protein Granola, Oat Free Chocolate Granola or Matcha Granola
- chocolate - dark chocolate chips or a drizzle of melted chocolate
- shredded coconut
- chopped nuts - almonds, cashews, walnuts, etc.
- nut butter - almond butter, peanut butter, cashew butter or sunflower seed butter for a nut free option.
- seeds - hemp seeds, sunflower seeds etc.
Storage Instructions:
Store chia pudding in an airtight container in the fridge for up to 3 days.

Quick suggestion. Make sure you are listed as the author when folks go to print out your recipes. I search all over for great vegan things my wife and I can eat and I print them out. But I don't like to pretend that I made it up if I didn't.
