Air Fryer Egg Bites with spinach, peppers and goat cheese are low carb and keto friendly. They are also delicious and perfect for meal prep!

Move over Starbucks! These egg bites are much better than Starbucks egg bites. These are fresh, made with simple ingredients and the mix in options are endless. I believe homemade is always best!

Ingredients overview:
- eggs - I love using pasture raised eggs. I know they're more money, but you can really see (by the color) and taste the difference!
- milk - Use whatever milk you prefer.
- spinach, very finely chopped - It's important to finely chop the spinach so there aren't big chunks. I love lots of spinach to get my greens in!
- red bell pepper, finely diced - Again, it's important to finely chop the pepper.
- crumbled goat cheese - Because everything is better with cheese!
- salt and pepper - Always a must!!
How to make egg bites in air fryer?
A complete list of ingredients, amounts and instructions is located on the recipe card below.
- First, preheat your air fryer.
- Add all of the ingredients into a mixing bowl. Crack 5 eggs and add milk, chopped spinach, diced red pepper, crumbled goat cheese and salt and pepper.
- Whisk all of the ingredients together.
- Grab 8 silicone muffin cups. I like to spray them with a little avocado oil just to be sure nothing sticks to them.
- Evenly distribute the egg mixture into each cup, filling ¾ of the way. I fill each with a little bit less than ¼ cup of the egg mixture.
- Place the filled silicone cups into the air fryer. Air fry at 300 degrees F for 9-13 minutes, or until the eggs are set.
- If you have a smaller air fryer, complete this recipe in two batches.
- Allow the egg bites to cool completely before removing them from the silicone cups.
Expert Tips
- Chop everything very fine, you don't want big chunks of the veggies to take over.
- Preheat your air fryer for even cooking.
- I highly recommend purchasing silicone molds to make the egg bites and storing them in an airtight meal prep container.

- vegetables - cooked broccoli, scallion, cooked potatoes, kale, onions, yellow, orange and green bell peppers
- protein - cooked bacon, cooked turkey bacon, cooked breakfast sausage

Dietary adaptations:
- gluten free - This recipe is naturally gluten free.
- dairy free - Use non dairy milk and omit the cheese.

- Fridge - Store egg bites in an airtight container in the refrigerator for 3-4 days.
- Freezer - Store the egg bites in the freezer for up to 3 months. Individually wrap the egg bites in plastic wrap and place them in a freezer bag.

What other kind of cheese can I use?

Thanks. I looked at a few variations and ended up using this one as the base. Did 6 eggs, and 1/2 cup spinach, ham, and moz. It seems like about 1.5 cups of filling is ideal. I should have cut down salt given the ham. 11 at 300 minutes and they came out of the Oxo molds I purchased perfectly. Thanks for the inspiration.

Spot on for timing and temp; I omitted: the ⅓ cup red bell pepper, and used 2oz of La Victoria Pepper Jalapeno Diced Hot (comes in 4oz can). I also replaced the ¼ cup crumbled goat cheese with Cotija - Mexican cheese. Added some shredded Monterey Jack, to the cups prior to adding the egg mix, and then added a bit more on top.
