Cottage Cheese and Fruit Parfait is a tasty high protein breakfast! The parfait is filled with cottage cheese, fruit and cocoa roasted nuts.

Each parfait contains 26 grams of protein!

There's not much labor required. The hardest part is preparing the roasted nuts.

Great for meal prep! I suggest baking the nuts in advance. Then, store the nuts, fruit and cottage cheese separately. You can assemble the parfait the day you're enjoying.

It's such a customizable recipe. Use whatever fruit you like. You can also use other toppings. I don't suggest ditching the cocoa roasted nuts though!

Ingredients in this recipe:

  • cottage cheese - Use regular cottage cheese or whipped cottage cheese.
  • blueberries
  • raspberries
  • raw cashews
  • raw hazelnuts
  • melted coconut oil
  • pure maple syrup - Use more if you would like the nuts to be sweeter.
  • vanilla extract
  • cacao powder or unsweetened cocoa powder
  • cinnamon
  • flaky sea salt
  • pure honey

How to make Cottage Cheese and Fruit Parfait:

First, preheat your oven to 350 degrees F.

Line a small cookie sheet with parchment paper and set it aside.

Cocoa dusted nuts in a bowl.

Place the chopped cashews and hazelnuts into a bowl.

Add the oil, maple syrup, vanilla extract, cacao powder, cinnamon and salt.

Combine until the nuts are evenly coated.

Place the nuts onto the cookie sheet. Spread them out in one even layer.

Bake at 350 degrees F for 8-12 minutes, flipping halfway through. They burn easily so keep an eye on them.

Allow the nuts to cool completely. They will harden as they cool.

Now, it’s time to assemble the parfaits.

Grab 2 glasses. Add a layer of cottage cheese, then fruit, then the nuts to each glass and repeat 2-3 times.

Drizzle honey over the top of each parfait.

There will be leftover cocoa roasted nuts. Store the nuts in an airtight container on the kitchen counter for up to one week.

Recipe pro-tips:

Use more maple syrup if you would like the nuts to be sweeter.

Use low fat cottage cheese, full fat, flavored or whipped cottage cheese. Choose your cottage cheese adventure!

If you can't find whipped cottage cheese in the grocery store, toss it in the food processor until fluffy.

If you don't like cashews or hazelnuts, you can swap out whatever nuts you prefer.

If you don't like blueberries or raspberries, you can swap out whatever fruits you prefer.

  • ½ cup raspberries
  • ½ cup chopped raw cashews
  • ½ cup chopped raw hazelnuts
