These Tahini Breakfast Cookies with banana and oats are tasty and great for meal prep! They are loaded with healthy ingredients and lots of fiber. They are also gluten free and sweetened with honey!

Tahini Breakfast Cookies

First of all, if you love tahini, you have to try out these cookies! The tahini gives them a slightly savory flavor which I love. They are subtly sweet from honey, low in sugar and high in fiber. These cookies are the perfect grab and go breakfast, snack or dessert.

Ingredients in Tahini Breakfast Cookies

  • gluten free oats
  • almond flour
  • chia seeds
  • honey
  • mashed banana 
  • tahini
  • egg
  • dark chocolate chips

How to Make Breakfast Cookies

  1. Mix together all ingredients in a bowl until well-combined.
  2. Use a 1 ½ tbsp scoop and drop cookies onto a sheet pan lined with parchment paper. Press the tops down slightly with the palms of your hands.
  3. Bake the cookies at 350° Fahrenheit for 9-12 minutes. Remove the cookies from the oven and allow them to cool on a cooling rack.
  4. Store the cookies in the refrigerator.

    Do these need to be refrigerated or can they be stored at room temperature?
