Mango Avocado Shrimp Salad with Peanut Lime Dressing is easy to make and comes together in less than 20 minutes. This healthy and light salad is perfect for summer!

Once I tasted this salad, I knew it was going to be a favorite this summer. The sweetness of the mango pairs so well with the shrimp, avocado and the homemade dressing. Also, it's super important to me to have some crunch in my salad. The crunch from the peppers and almonds brings this salad all together!

Ingredients in Mango Avocado Shrimp Salad

  • spring mix
  • thawed frozen shrimp (peeled and deveined)
  • olive oil
  • spices
  • diced avocado
  • diced mango
  • diced red onion
  • thinly sliced red bell pepper
  • sliced almonds

Ingredients in Peanut Lime Dressing

  • creamy natural peanut butter
  • fresh lime juice 
  • sesame oil
  • apple cider vinegar
  • coconut aminos
  • ground ginger
  • garlic powder
  • sesame seeds

Customize this Salad

  1. Substitute pineapple for mango if you are not a fan of mango.
  2. Use spinach in place of spring mix.
  3. Add chickpeas for some extra protein.
  4. Use chicken or salmon instead of shrimp. I recommend Air Fried Chicken or Easy Broiled Salmon.
  5. Add brown rice to the salad and make it a more filling meal.

Ingredients
  

Ingredients in Mango Avocado Shrimp Salad

  • 4 cups spring mix
  • 1 ½ cups thawed frozen shrimp (peeled and deveined) - I used small wild pink shrimp
  • ½ tbsp olive oil
  • ½ tsp garlic powder
  • ¼ tsp chili powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ cup diced avocado
  • ⅓ cup diced mango
  • ⅛ cup diced red onion
  • ½ cup thinly sliced red bell pepper
  • 3 tbsp sliced almonds

Ingredients in Peanut Lime Dressing

  • 3 tbsp creamy natural peanut butter
  • ¼ cup fresh lime juice - the juice of about 2 limes
  • 1 tbsp sesame oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp coconut aminos
  • 1 tsp ground ginger
  • 1 tsp garlic powder
  • desired amount of sesame seeds to sprinkle on top of the salad

Instructions
 

  • First, make the dressing for the salad. Whisk together all ingredients for the Peanut Lime Dressing in a small bowl until combined. Set aside.
  • Secondly, assemble all ingredients for the salad. Place the spring mix, avocado, mango, red onion, red bell pepper and almonds in a large bowl. Set aside.
  • Then, thaw the frozen shrimp. Take the shrimp out of the package and put them into a bowl in the sink. Run cold water over the shrimp for about 4-5 minutes. When the shrimp are soft and no longer frozen, they are thawed. Place the shrimp onto a paper towel and pat them dry to remove the water.
  • Now, place the shrimp into a clean bowl and add in the garlic powder, chili powder, salt and pepper. Toss until the shrimp are coated in the spices.
  • Heat olive oil in a pan over medium heat. Place the shrimp in the pan and cook for about 2-3 minutes per side. The shrimp will turn pink when cooked through.
  • Remove the shrimp from the pan and add them on top of the salad mixture. Drizzle the dressing on top, sprinkle with sesame seeds, toss and enjoy!

    This was such a yummy, refreshing salad to make in the heat of Summer! Easy to put together and a super big hit in our house! Love the combo of mango, avocado and shrimp and the dressing is so savory. This will be part of our meal planning in the future for sure!
