Easy Farro Salad with Arugula and Cranberries
To begin, this farro salad recipe is great to add to any weeknight meal. This salad is also a perfect simple holiday side dish. In addition, this farro is a great meal prep option. You can prepare the salad ingredients in advance and add the dressing on day of. Lastly, I believe farro is an underrated grain. It's easy to cook, healthy and delicious!
What is farro?
Farro is a healthy, high-fiber ancient grain with a chewy dense texture. Farro is great for dishes such as salads, soups or risotto.
Should I soak farro before cooking?
You do not need to soak farro before cooking. Honestly, I am lazy and will always cut out an extra step if I can. If you soak farro before cooking, it is said to shorten the cooking time. I personally like to buy 10 minute cooking farro from Whole Foods or Trader Joe's. This way, I don't even need to worry about soaking the farro.

Salad Ingredients:
- arugula
- cooked farro
- red onion
- dried cranberries - I used unsweetened cranberries from Trader Joe's!
- chopped pecans
- crumbled gorgonzola cheese
Balsamic Dressing Ingredients:
- olive oil
- balsamic vinegar
- honey
- garlic powder
- salt
- black pepper
Can I substitute ingredients for this salad recipe?
Sure! You can use whatever green you would like. If you rather kale or spinach for this salad you can. Also, if you don't like gorgonzola cheese, use feta cheese or goat cheese. If you don't have pecans on hand, use another nut. This recipe is very forgiving and very customizable. Let me know in the comments if you try any delicious substitutions!

Ingredients
Ingredients for Salad:
- 3 cups arugula
- 1 cup cooked farro - (I follow the cooking instructions on the package)
- ¼ cup sliced red onion
- ¼ cup dried cranberries - (I used unsweetened dried cranberries from Trader Joe's)
- ¼ cup chopped pecans
- ¼ cup crumbled gorgonzola cheese
Ingredients for Balsamic Dressing:
- 1 ½ tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- ¼ tsp garlic powder
- ⅛ tsp salt
- ⅛ tsp black pepper
Instructions
- Whisk together all ingredients for the dressing in a small bowl.
- Assemble all ingredients for the salad, pour the dressing over the top and enjoy!
