Move over Greek yogurt! Kefir is taking over this recipe. These pancakes are like pillows thanks to the luscious kefir. I used an unsweetened kefir in this pancake recipe, but you could use whatever flavor you would like. You can make strawberry pancakes with strawberry flavored kefir. Better yet, I know Lifeway sells a lemon flavored kefir. Lemon blueberry kefir pancakes would be outrageous! Let me know if you get creative.

Happy to have found your site as I need gluten free, almond free, sorghum free etc. so recipes with oat flour really work for me! I'm curious about the amount of protein in this recipe. Some of your others have the nutritional profile, such as the cottage cheese pancakes, which I'm making tonight.
Thank you!

So happy to have you here! 🙂 My older recipes don't have it because it wasn't something I was doing at the time, but I just added it for you!
