Move over Greek yogurt! Kefir is taking over this recipe. These pancakes are like pillows thanks to the luscious kefir. I used an unsweetened kefir in this pancake recipe, but you could use whatever flavor you would like. You can make strawberry pancakes with strawberry flavored kefir. Better yet, I know Lifeway sells a lemon flavored kefir. Lemon blueberry kefir pancakes would be outrageous! Let me know if you get creative.

4 step process how to make kefir pancakes

Ingredients in this recipe

  • gluten free oat flour
  • baking powder
  • cinnamon
  • ground cardamom
  • unsweetened applesauce
  • maple syrup
  • egg
  • plain unsweetened kefir
  • coconut oil – (for greasing the pan)

How do you make Kefir Pancakes?

  1. Whisk together all the ingredients for the pancake batter.
  2. Heat a pan on medium and add coconut oil.
  3. Use a ¼ cup scoop and pour the batter onto the pan.
  4. Cook the pancakes for about 2-3 minutes per side. You may have to adjust the heat. If the pancakes aren’t cooking fast enough, increase the heat. If the pancakes are starting to brown too quickly, lower the heat.
  5. Serve with your favorite toppings!
