Firstly, these Healthy Pumpkin Oatmeal Breakfast Bars are the perfect warm and cozy fall inspired make-ahead breakfast. These bars contain oats, pumpkin, pumpkin pie spice and sweetened with a little bit of maple syrup. Simply, throw all the ingredients into a bowl, bake and slice into bars. You can keep these in the fridge to have for the week or freeze them and enjoy over time.

  • pumpkin puree
  • eggs
  • unsweetened almond milk
  • maple syrup
  • oats
  • ground flaxseed
  • baking powder
  • vanilla

Healthy Pumpkin Oatmeal Breakfast Bars

These Healthy Pumpkin Oatmeal Breakfast Bars are the perfect warm and cozy fall inspired make-ahead breakfast!

Prep Time 5 minutes
Cook Time 40 minutes
Servings 6 people

Ingredients

  • 1 cup pumpkin puree NOT pumpkin pie filling!
  • 2 eggs
  • 1 cup unsweetened almond milk
  • ¼ cup maple syrup
  • 2 cups GF oats
  • ¼ cup ground flaxseed
  • ½ tbsp baking powder
  • 1 tsp vanilla
  • 1 ½ tsp pumpkin pie spice

Instructions

  • Mix together all ingredients until well-combined.

  • Grab an 8×8 baking pan lined with parchment paper. Spoon the oatmeal mixture into the baking pan. Bake at 400 degrees for 30-40 minutes.

  • Once cooked, allow to cool, slice into bars and enjoy! I topped mine with fresh banana, more pumpkin pie spice and peanut butter.

  • Note: You can store these in the fridge for a few days or individually wrap them and place them into the freezer. In the morning, simply, warm a bar in the microwave, add desired toppings and your breakfast is ready!

      We love this recipe in my house! It’s on repeat just about every other weekend! It’s good to freeze a few bars, too, to take to school in the morning for me – or perfect for a snack even. JUST GOOD!

    Very easy to make and delicious. Subbed Apple cider for the almond milk and turned out super tangy. Ate w homemade apple sauce & almond butter- great post yoga power snack! A recipe I’ll certainly repeat.

    made these to have on hand for quick breakfasts in the morning and i love them! i added some vanilla collagen and a small diced apple to mine and the apple is a delicious addition! i got 16 squares out of this recipe and like to heat up two to have for breakfast topped with nut butter and some pumpkin seeds 🙂

    Super easy to make and absolutely delicious!! Added peanut butter and chocolate chips to one of the batches and made it plain for our 1.5 year old! He loved “his” bars and wouldn’t share! Definitely will be making again!

Crispy Air Fryer Tofu🌿feat. @blueevolution Alas Crispy Air Fryer Tofu🌿feat. @blueevolution Alaskan Kombu Kelp Puree!

This puree is a flavorful plant-based umami seasoning. It's a great source of iodine and rich in vitamins A + B. Use it as a seasoning for meats, sauces, soups, dips etc.

4 Ingredient Kelp Puree Seasoning Paste
- 2 tbsp Blue Evolution Alaskan Kombu Kelp Puree
- 1 tbsp garlic powder
- 1 tbsp tahini
- 1/2 tsp sea salt

Drain the package of extra firm tofu or use a tofu press to release all of the liquid from the tofu. Cut the tofu into cubes and coat in the 4 Ingredient Kelp Puree Seasoning Paste. Air fry at 400 degrees for about 30 minutes or until crispy. Serve over coconut brown rice with scallions, cilantro, sesame seeds, coconut aminos and hot sauce!
