Healthy Pumpkin Oatmeal Breakfast Bars
These Healthy Pumpkin Oatmeal Breakfast Bars are the perfect warm and cozy fall inspired make-ahead breakfast!
Ingredients
- 1 cup pumpkin puree NOT pumpkin pie filling!
- 2 eggs
- 1 cup unsweetened almond milk
- ¼ cup maple syrup
- 2 cups GF oats
- ¼ cup ground flaxseed
- ½ tbsp baking powder
- 1 tsp vanilla
- 1 ½ tsp pumpkin pie spice
Instructions
- Mix together all ingredients until well-combined.
- Grab an 8×8 baking pan lined with parchment paper. Spoon the oatmeal mixture into the baking pan. Bake at 400 degrees for 30-40 minutes.
- Once cooked, allow to cool, slice into bars and enjoy! I topped mine with fresh banana, more pumpkin pie spice and peanut butter.
- Note: You can store these in the fridge for a few days or individually wrap them and place them into the freezer. In the morning, simply, warm a bar in the microwave, add desired toppings and your breakfast is ready!

So I followed the recipe ste by step, but it didn’t come out crunchy, it came out very fluffy. I only had 1 cup of oats, maybe that’s why?

Hi! They are supposed to be fluffy. Baked oats aren't like granola bars. They are more like muffins. I do recommend using 2 cups of oats as the recipe states though. Always follow the recipe as written for optimal results.

I made them again and this time with the oats and the seeds (I didn’t have the seeds neither) and they came just right. It definitely made difference! They were delicious!
Question, once frozen, how would you thaw them? Can you thaw them in the microwave? If yes, with “defrost” settings or simply by setting the microwave temperature to high?

You can just microwave on high until warm!

I’ve tried it several times with pumpkin and then with banana. I must admit I did make a few changes. I used Chia seeds because I didn’t have flax. I also threw in a handful of sliced almonds and coconut. They are wonderful.
