- tamari or low sodium soy sauce - I am partial to tamari.

Step 1
Heat a pan over medium heat. Pour in the sesame oil. Add minced garlic and cook for 1-2 minutes. Next, add the mushrooms, salt and pepper and sauté for 4-6 minutes.
Step 2
Pour in the tamari and let the mushrooms sit without sautéing for 2-3 more minutes to allow them to become golden.
Step 3
Serve with scallion and a sprinkle of sesame seeds!
Recipe pro-tips:
- Cleaning - Use a damp paper towel to gently wipe off any dirt on the mushrooms. Don't run them under water because they can absorb the water.
- Don't move the mushrooms around once you pour in the tamari because it will help them caramelize nicely.
