Two of the most popular breakfast recipes on my website are my 3 Ingredient Pancakes and my Spinach Oatmeal Blender Pancakes. I decided to take ideas from both of these recipes to create Protein Banana Pancakes with Oats. They are filled with protein from the eggs and also from the added protein powder!

ingredients for protein pancakes

Ingredients in this recipe

  • spotty-brown banana (the riper the banana, the sweeter the pancakes)
  • unsweetened applesauce
  • eggs
  • old fashioned rolled oats, gluten free if necessary
  • vanilla protein powder (I used whey protein)
  • coconut oil for greasing

How to make Protein Banana Pancakes in a blender?

  1. Place all ingredients into your blender.
  2. Blend just until combined. Don't over-blend. Once you can't see whole pieces of oats, stop the blender.
  3. Heat a pan on medium and add coconut oil.
  4. Cook the pancakes for about 2-3 minutes per side. You may have to adjust the heat. If the pancakes aren’t cooking fast enough, increase the heat. If the pancakes are starting to brown too quickly, lower the heat.
  5. Serve with your favorite toppings!

I haven't made these yet, but they look so delicious! What would I do if I used egg whites instead of whole eggs? Would I need to add another ingredient?

Using just egg whites would probably make the pancakes tough.
