Ingredients
  

  • 1 spotty-brown banana (the riper the banana, the sweeter the pancakes)
  • ¼ cup unsweetened applesauce
  • 2 eggs
  • ¾ cup old fashioned rolled oats, gluten free if necessary
  • 3 tablespoons vanilla protein powder (I used whey protein)
  • coconut oil for greasing

Instructions
 

  • Place all ingredients into your blender.
  • Blend just until combined. Don't over-blend. Once you can't see whole pieces of oats, stop the blender.
  • Heat a pan on medium and add coconut oil.
  • Cook the pancakes for about 2-3 minutes per side. You may have to adjust the heat. If the pancakes aren’t cooking fast enough, increase the heat. If the pancakes are starting to brown too quickly, lower the heat.
  • Serve with your favorite toppings!
