Baked Lemon Blueberry Donuts
We all know I adore chocolate treats. I'm a sucker for all things chocolate peanut butter. I do have to say that I LOVE this lemon blueberry flavor. The lemony berry mix is light, bright and tasty. I promise, even if you are a chocolate lover like me, these donuts will convert you.
I still don't know if I'm “doughnut” girl or “donut” girl. Now I have recipes with both spellings. I know which is technically grammatically correct, but many search "donut" in my search box. I want to tend to everyone so I will be using both spellings. Doesn't matter as long as the donuts/doughnuts are delicious!

My Lemon Blueberry Baked Oats are the #1 recipe on my site right now. I thought I should create another recipe that featured the same flavor. I am so glad that I did. These donuts will be your new obsession!
Ingredients in Baked Lemon Blueberry Donuts
- almond flour
- baking powder (gluten-free)
- eggs
- maple syrup
- fresh lemon zest
- fresh blueberries
- olive oil (for greasing the donut pan)
Ingredients in Lemon Glaze
- softened tofu cream cheese - I love Tofutti Better Than Cream Cheese – You can find it at any grocery store!
- honey
- fresh lemon juice
HOW TO MAKE LEMON BLUEBERRY DONUTS
- Mix together almond flour, baking powder, eggs, maple syrup, lemon zest and blueberries to form the batter.
- Grab a donut pan and grease with olive oil. Spoon about ¼ cup of the batter into each donut mold. Bake at 350° Fahrenheit for 10-15 minutes.
- Allow the donuts to cool completely and remove from the donut pan.
- As the donuts are cooling, make the lemon glaze. Whisk together the softened tofu cream cheese, honey and lemon juice until creamy.
- Dip each of the donuts into the glaze. Enjoy immediately!
- This recipe makes extra glaze just in case you want to do some more dipping!
