Ingredients in Baked Lemon Blueberry Donuts

  • 1 cup almond flour
  • 1 tsp baking powder (gluten-free)
  • 2 eggs
  • 3 tbsp maple syrup
  • 2 tbsp fresh lemon zest
  • cup fresh blueberries
  • 1 tsp olive oil -  (for greasing the donut pan)

Ingredients in Lemon Glaze

  • cup softened tofu cream cheese
  • 2 tbsp honey
  • 2 tbsp fresh lemon juice

Instructions
 

  • Mix together almond flour, baking powder, eggs, maple syrup, lemon zest and blueberries to form the batter.
  • Grab a donut pan and grease with olive oil. Spoon about ¼ cup of the batter into each donut mold. Bake at 350° Fahrenheit for 10-15 minutes.
  • Allow the donuts to cool completely and remove from the donut pan.
  • As the donuts are cooling, make the lemon glaze. Whisk together the softened tofu cream cheese, honey and lemon juice until creamy.
  • Dip each of the donuts into the glaze. Enjoy immediately!
  • This recipe makes extra glaze just in case you want to do some more dipping!
