If you love a sweet breakfast as much as I do, this baked oatmeal is for you!
Lemon Blueberry Baked Oats
These lemon blueberry baked oats are extremely simple and so satisfying. They taste like you are eating an oat cake for breakfast! You can easily prep these in advance as well.
Ingredients
- ⅓ cup oats
- ⅓ cup unsweetened almond milk
- ½ mashed spotty-brown banana
- 1 tsp chia seeds
- 1 egg white
- 1 tbsp fresh lemon juice
- ⅛ cup fresh blueberries
- 1 tsp fresh lemon zest
- ½ tsp olive oil
Instructions
- Mix oats, almond milk, mashed banana, chia seeds, egg white, lemon juice and blueberries together in a bowl.
- Spray or drizzle an oven safe small ramekin with olive oil. Bake at 400 degrees for about 30-40 min.
- Top with 1 tsp fresh lemon zest before enjoying.
- Feel free to prep these in advance! Cover the baked oats or place them into a glass container in the fridge. Microwave day of and top with desired toppings.

Can we sub ground flax with water for egg white?
Is this microwaveable … not just for reheating , but for baking ?
Hi Linda! I have only made the recipe with the above ingredients. Let me know if you try the ground flax! This is an oven baked recipe, I have not tried making it in the microwave.

Hi! I haven’t tried it with a whole egg so I cannot say for sure, but I would think the texture would be slightly thicker.
Goodness gracious this is amazing!! I made it because of the great reviews. Honestly, I was a doubter because I just couldn’t imagine it being sweet enough even though I make so many things with bananas but I was a hopeful doubter. The flavor is amazing!! Truly it’s amazing!! My two tips…I can’t not add salt to anything I bake or anything oatmeal, so I added some salt. When it was done baking, I tucked my ramekins under the broiler to add some extra crunch. From ages 4-50 this was a winner!! The littles begged for more!! Just make these. You’ll love them!
