This Sweet Potato and Chickpea Salad with Tahini Orange Dressing is a delicious and healthy meatless meal!

If you are looking to upgrade your salad game, look no further! This salad is so easy, but very impressive. The crispy air fryer sweet potatoes and chickpeas are thrown over a bed of kale and topped with dried cranberries and shredded Pecorino Romano cheese. Finish off the dish with a drizzle of homemade Tahini Orange Salad Dressing!
Ingredients in this salad
- diced sweet potato
- canned chickpeas (rinsed and drained)
- olive oil
- garlic powder
- salt
- chopped tuscan kale
- dried cranberries - I used unsweetened cranberries from Trader Joe’s!
- shredded Pecorino Romano Cheese or Parmesan Cheese
Ingredients in Tahini Orange Salad Dressing
- tahini
- olive oil
- apple cider vinegar
- fresh orange juice
- salt/pepper
- garlic powder
- paprika
How to make sweet potato and chickpea salad
- Place the diced sweet potato and chickpeas into the air fryer. Spray or drizzle olive oil over the top. Sprinkle with garlic powder and salt. Air fry for about 15-20 minutes at 400 degrees.
- To make the Tahini Orange Salad Dressing, place all dressing ingredients into a small glass jar and shake until combined.
- Grab a bowl and assemble the ingredients for the salad. Lay down the kale at the bottom, add the cooked sweet potato, chickpeas, dried cranberries and shredded Pecorino Romano Cheese.
- Drizzle the dressing over the top, toss and enjoy!
