Ingredients
  

Ingredients in Sweet Potato and Chickpea Salad:

  • 1 cup diced sweet potato
  • ¾ cup canned chickpeas (rinsed and drained)
  • 1 tsp olive oil
  • ½ tsp garlic powder
  • ¼ tsp salt
  • 4 cups chopped tuscan kale
  • cup dried cranberries
  • cup shredded Pecorino Romano Cheese or Parmesan Cheese

Ingredients in Tahini Orange Salad Dressing:

  • 1 tbsp tahini
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar 
  • 2 tbsp fresh orange juice
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ¼ tsp paprika

Instructions
 

  • Place the diced sweet potato and chickpeas into the air fryer. Spray or drizzle olive oil over the top. Sprinkle with garlic powder and salt. Air fry for about 15-20 minutes at 400 degrees.
  • To make the Tahini Orange Salad Dressing, place all dressing ingredients into a small glass jar and shake until combined.
  • Grab a bowl and assemble the ingredients for the salad. Lay down the kale at the bottom, add the cooked sweet potato, chickpeas, dried cranberries and shredded Pecorino Romano Cheese.
  • Drizzle the dressing over the top, toss and enjoy!
