First of all, this Simple Sesame Tempeh Stir Fry is an extremely flavorful and easy meatless meal. It takes about 25 minutes from start to finish. This is a great option for any night of the week, but I do love participating in Meatless Monday! The tempeh and bok choy is covered in a sauce made with ingredients like fresh lime, tahini, ginger and coconut aminos. Lastly, you can serve this dish over cauliflower rice or brown rice!

Simple Sesame Tempeh Stir Fry
Ingredients
- 1 8 oz package of tempeh cut into small cubes
- 2 cups chopped bok choy
- 1 ½ tbsp minced garlic
- 1 tbsp sesame oil
Ingredients for Sesame Sauce:
- 2 tbsp fresh lime juice
- 2 tbsp coconut aminos
- 2 tbsp tahini
- ½ tsp ground ginger
- ½ tsp sesame seeds
Instructions
- To make the sesame sauce, whisk together lime juice, coconut aminos, tahini, ground ginger and sesame seeds in a small bowl.
- In a pan, on medium heat, sauté the minced garlic in sesame oil for 2 minutes. Add the chopped bok choy into the pan and cook for 3-5 minutes until the bok choy begins to wilt. Toss in the cubed tempeh and cook for 8 minutes on medium, stirring occasionally. Add sauce and cook for 3-5 minutes more until the tempeh becomes golden.
- I suggest serving the dish over cauliflower rice or brown rice. Optional to add more sesame seeds on top!
