This Simple Sesame Tempeh Stir Fry is an easy and tasty meatless meal. It is made with ingredients like tempeh and bok choy and covered in a sesame sauce.
To make the sesame sauce, whisk together lime juice, coconut aminos, tahini, ground ginger and sesame seeds in a small bowl.
In a pan, on medium heat, sauté the minced garlic in sesame oil for 2 minutes. Add the chopped bok choy into the pan and cook for 3-5 minutes until the bok choy begins to wilt. Toss in the cubed tempeh and cook for 8 minutes on medium, stirring occasionally. Add sauce and cook for 3-5 minutes more until the tempeh becomes golden.
I suggest serving the dish over cauliflower rice or brown rice. Optional to add more sesame seeds on top!
