No Bake Birthday Cake Truffles
These simple cake batter truffles are a highly addictive snack or dessert. I love keeping these in my fridge for when the sweet tooth kicks in. The 3 ingredient peanut butter filling is coated in melted white chocolate and rainbow sprinkles. Who needs cake when you can have cake truffles!?
Ingredients in No Bake Birthday Cake Truffles
- almond flour
- creamy natural peanut butter
- maple syrup
- white chocolate chips
- coconut oil
- dye free rainbow sprinkles - I grabbed mine from Whole Foods!
How to make Cake Truffles
- Start by mixing together all the ingredients for the filling in a bowl until combined – (almond flour, creamy natural peanut butter and maple syrup)
- Use a 1 ½ tbsp cookie scoop, roll into balls and place into the freezer for 30 minutes.
- While they are hardening, melt the white chocolate down with coconut oil in a saucepan on low heat until completely melted.
- Remove the bites from the freezer, coat in the melted chocolate. Sprinkle the desired amount of sprinkles over each truffle.
- Place back into the freezer for 30 minutes and enjoy!
- Store these truffles in the fridge in an airtight container. THESEÂ containers are my favorite!
