Bring these truffles to your next holiday get together and no one will be missing the pecan pie! Simply blend almond flour, pecans, almond butter, honey, vanilla and pumpkin pie spice and form balls. Then, cover the bites in dark chocolate and sprinkle with chopped pecans! It's as easy as that.

- almond flour
- pecans
- almond butter
- raw honey
- vanilla extract
- pumpkin pie spice
- dark chocolate chips
- coconut oil

Store the truffles in the fridge in an airtight container. Enjoy within 4-5 days.
Place chocolate chips and coconut oil in an oven safe bowl. Microwave in 30 second increments to ensure the chocolate does not burn. (Example: Microwave for 30 seconds, stir the chocolate and then place back into the microwave.) Repeat this until the chocolate is completely melted.
Spoon the flour into the measuring cup. Then, level off the top of the cup with a knife. Do not place the measuring cup into the bag and scoop. You could end up with more flour than needed.

Healthy Pecan Pie Truffles
Ingredients
- Β½ cup almond flour
- β cup pecans + extra chopped pecans for garnishing
- ΒΌ cup almond butter
- 2 tablespoons raw honey
- 1 teaspoon vanilla extract
- ΒΌ teaspoon pumpkin pie spice
- Β½ cup dark chocolate chips
- Β½ teaspoon coconut oil
Instructions
- Blend almond flour, pecans, almond butter, honey, vanilla and pumpkin pie spice in a food processor.
- Use a 1 Β½ tbsp scoop, roll into balls and place into the freezer for 30 min.
- Next, melt the chocolate. Place chocolate chips and coconut oil in an oven safe bowl. Microwave in 30 second increments to ensure the chocolate does not burn. (Example: Microwave for 30 seconds, stir the chocolate and then place back into the microwave.) Repeat this until the chocolate is completely melted.
- Remove the bites from the freezer, coat in the melted chocolate and sprinkle with chopped pecans.
- Place back into the freezer for 30 minutes and enjoy!
