Healthy Popcorn Chicken
If you loved popcorn chicken or chicken nuggets as a kid, this much healthier version is for you! I remember I used to get popcorn chicken in the cafeteria. The day the lunchroom was serving popcorn chicken was everyone's favorite day. My version is oven baked instead of fried. I also added an air fryer option below!
Ingredients in Healthy Popcorn Chicken
- fresh chicken breast tenders cut into small cubes
- egg
- unsweetened almond milk
- almond flour
- panko breadcrumbs
- nutritional yeast
- garlic powder
- paprika
- salt
- black pepper
- olive oil
How to Make Healthy Popcorn Chicken
- In a mixing bowl, combine egg and almond milk. In another mixing bowl, combine almond flour, breadcrumbs and spices.
- Dip chicken cubes into the egg mixture then the breading mixture.
- Place the breaded chicken on a pan lined with parchment paper. Drizzle/spray the chicken with olive oil.
- Bake in the oven at 400° degrees F for 12-16 minutes (turning once halfway through) until golden.
- Serve the little nuggets with your favorite dipping sauce!
How to make air fryer popcorn chicken?
Air fry the chicken in your air fryer at 400 degrees F for 10-15 minutes or until golden. You can air fry them in two batches if needed.
