If you love a sweet breakfast like me, you need to try out this French toast recipe! It has the perfect golden crust, but is soft on the inside. I opted for Ezekiel bread to make this French toast high in fiber. Some other bread brands to consider are Sola Bread (Low Carb), Angelic Bakehouse and Canyon Gluten Free Bakehouse.
Ingredients in this Recipe
- bread of choice
- unsweetened almond milk
- egg
- cinnamon
- vanilla (I used vanilla powder, but you can use vanilla extract if you prefer)
- coconut sugar
- coconut oil
How to make a healthy French toast
- In a bowl, whisk together almond milk, egg, cinnamon, vanilla and coconut sugar.
- Place coconut oil into a pan over medium heat.
- Dunk the slices of bread into the liquid mixture (one at a time). Make sure you flip the bread to coat both sides evenly. Then, place the slices of soaked bread into the hot pan. You should hear a sizzle when the bread hits the pan.
- Cook 2-3 minutes per side or until golden brown.
- Serve with toppings of choice!

Can you freeze french toast?
Yes. Ensure the French toast is cooled completely. Then, individually wrap the French toast in plastic wrap, place the wrapped slices into a freezer bag and freeze. The French toast will last up to about 2 months in the freezer. When you are ready to eat it, reheat in a hot pan coated with coconut oil or place into the toaster.
