You know I love my oatmeal, but I've been switching things up for extra fiber. I thought I would share this recipe because it's so good! I surprisingly feel like I'm eating a bowl of oatmeal without the oats. The texture is slightly more like cream of wheat, but it still feels very similar to oatmeal.
This porridge is made from a mix of ground flaxseed and coconut flour. It's sweetened solely with flavored collagen! The collagen I use is keto and paleo friendly. Ingredients in this recipe
- ground flaxseed
- coconut flour

- ground cinnamon
- unsweetened almond milk
How to make porridge without oats?
- Place all 5 ingredients into a small microwave-safe bowl.
- Whisk very well with a fork or a small whisk. Make sure there are no lumps. The mixture should get thicker as you whisk.
- Microwave on high for 60-90 seconds.
- Add toppings of choice and enjoy! I used blackberries, unsweetened shredded coconut, chopped walnuts and almond butter.
Can I meal prep Flaxseed and Coconut Porridge?
Yes! Simply whisk all of the ingredients together and place into the fridge overnight in an airtight container. In the morning, microwave and add toppings of choice. You may need to add a little extra milk the next day because the mixture will get thicker as it sits.

Do you think I could use almond flour in this?

You would definitely have to play around with the measurements because coconut flour and almond flour have different textures. Coconut flour requires more liquid so you would probably need less liquid if you used almond flour.

I love this recipe, it's just my speed: quick and easy. I made this for breakfast this morning and my husband and I both enjoyed it. I did use protein powder (whey for my husband and collagen for me) with higher protein levels, but that's the only thing I did different. I topped it with coconut and blueberries, and chocolate chips for my husband to go with his chocolate protein powder. This is definitely a recipe I'll be making often. Thank you!

Hi Krista! Love this idea…although mine didn’t come out quite like yours. I left out the collagen and used flaxseed powder instead of ground flaxseed (maybe that’s why, but I can’t see how that would change anything) but kept everything else the same and it was very thick- even before I microwaved it which didn’t really change the consistency.

Hi Olivia! I always recommend sticking to using the ingredients listed in the recipe for best results. I haven't made the recipe without collagen. Also, you could add some more milk to thin it out.
