Ingredients
  

Ingredients for Salad:

  • 3 cups arugula
  • 1 cup cooked farro - (I follow the cooking instructions on the package)
  • ¼ cup sliced red onion
  • ¼ cup dried cranberries - (I used unsweetened dried cranberries from Trader Joe's)
  • ¼ cup chopped pecans
  • ¼ cup crumbled gorgonzola cheese

Ingredients for Balsamic Dressing:

  • 1 ½ tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • ¼ tsp garlic powder
  • tsp salt
  • tsp black pepper

Instructions
 

  • Whisk together all ingredients for the dressing in a small bowl.

  • Assemble all ingredients for the salad, pour the dressing over the top and enjoy!
