Healthy Easy Farro Salad with Arugula and Cranberries - Simple to make, tasty and packed with fiber! Great side dish or meal prep option.

Ingredients for Salad:
- 3 cups arugula
- 1 cup cooked farro - (I follow the cooking instructions on the package)
- ¼ cup sliced red onion
- ¼ cup dried cranberries - (I used unsweetened dried cranberries from Trader Joe's)
- ¼ cup chopped pecans
- ¼ cup crumbled gorgonzola cheese
Ingredients for Balsamic Dressing:
- 1 ½ tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- ¼ tsp garlic powder
- ⅛ tsp salt
- ⅛ tsp black pepper
Whisk together all ingredients for the dressing in a small bowl.
Assemble all ingredients for the salad, pour the dressing over the top and enjoy!
