Many of you have asked me for months and months to create a vegan pancake recipe. I tried a few times, but didn't have success. They either wouldn't cook through or wouldn't rise. I finally created a recipe with the perfect ratio of wet to dry ingredients. Plus, the mix of apple cider vinegar, almond milk and baking powder is the secret to fluffy vegan pancakes.

Ingredients in this recipe
- unsweetened almond milk
- unsweetened applesauce
- coconut sugar
- apple cider vinegar
- gluten free oat flour
- ground flaxseed
- baking powder (gluten free)
- coconut oil (for greasing the pan)
How to make pancakes at home without eggs?
- Whisk together all ingredients in a large mixing bowl.
- Let the batter sit out for 5 minutes.
- Cook the pancakes.
- Enjoy!
What to replace eggs with in pancakes?
A mixture of applesauce and ground flaxseed replace the eggs in this pancake recipe. Letting the pancake batter sit for 5 minutes helps everything gel together.
Variations - What to add into the pancake batter?
- Add a splash of vanilla extract.
- Use a teaspoon of ground cinnamon, pumpkin pie spice or ground cardamom for a more warming flavor.
- Add your favorite chopped nut or shredded coconut.

Easy Eggless Oat Pancakes
Ingredients
- 1 cup unsweetened almond milk
- ½ cup unsweetened applesauce
- 2 tablespoons coconut sugar
- ½ tablespoon apple cider vinegar
- 1 ⅓ cups + 3 tablespoons gluten free oat flour
- 1 tablespoon ground flaxseed
- 2 teaspoons baking powder (gluten free)
- coconut oil (for greasing the pan)
Instructions
- Whisk together all ingredients in a large mixing bowl.
- Let the batter sit out for 5 minutes. This will help everything gel together.
- Heat a pan on medium and add coconut oil.
- Use a ¼ cup scoop and pour the batter onto the pan.
- Cook the pancakes for about 2-3 minutes per side. You may have to adjust the heat. If the pancakes aren’t cooking fast enough, increase the heat. If the pancakes are starting to brown too quickly, lower the heat.
- Serve with your favorite toppings!
