8-inch flour tortillas - I also used quinoa tortillas and they worked great.
shredded cheddar cheese - You can use other cheeses such as oaxaca cheese, chihuahua cheese, monterey jack, pepper jack or mozzarella.
freshly chopped cilantro - If you don't like cilantro, omit it.
smoked paprika - Sweet paprika or chili powder will also work fine for this recipe. I just love the flavor of smoked paprika.
Switch things up! This quesadilla is filled with chicken and cheese. Use other ingredients such as beans, vegetables, shrimp or steak instead.
How do you make a quesadilla in the air fryer?

Add chicken breast to a bowl and coat in avocado oil and spices.
Heat a pan to medium. Place the chicken into the pan and cook about 4-6 minutes per side or until the chicken's temperature reaches 165 degrees F.
Transfer the chicken to a cutting board.
Let it sit for 2-3 minutes. Then, dice the chicken.
Preheat the air fryer to 350 degrees F.
Place one tortilla on a cutting board. Add cheese and chicken to one side of the tortilla. Fold it over and secure it with 3 wooden toothpicks.
Place the quesadilla in the air fryer basket.
Air fry at 350 degrees F for 6-8 minutes, flipping halfway. When you flip the tortilla at the halfway point, remove the toothpicks.
Make the second quesadilla when the first one is done. If you have a large enough air fryer, cook both of them at the same time.
Next, make avocado yogurt dip. Mash avocado with yogurt, lime juice, smoked paprika and salt. Lastly, fold in freshly chopped cilantro.
Cut the quesadillas and serve them with the dip and any other desired toppings such as salsa.
Recipe pro-tips:
There's no need to add oil to the air fryer or spray the quesadilla. I tried this and the quesadilla became too crispy.
Don't skip the toothpicks or the quesadilla will open in the air fryer.
Make sure you flip the quesadilla for even cooking.
Add more cheese if you like your quesadilla extra cheesy.

Storage and reheating instructions:
Store leftover quesadillas in an airtight container in the refrigerator for up to 2 days.
Reheat the quesadilla in the air fryer at 350 degrees F for 2 minutes, or until warm.
