After making Air Fryer Delicata Squash and Air Fryer Butternut Squash Fries, I knew it was time to tackle another air fryer squash recipe.
I'm a big fan of squash during the fall and winter months. It makes for a healthy, easy and tasty side dish. This acorn squash in the air fryer is all of those things!

- avocado oil - Any neutral oil will work fine.
- freshly chopped thyme - Fresh is always best.

How to cook acorn squash in an air fryer?

- First, preheat your air fryer.
- Now, cut the acorn squash.
- Slice the squash in half.
- Next, scoop out the seeds with a spoon.
- Lastly, lay the squash cut side down and cut into ½ inch half circles.
- Place the cut squash into a bowl.
- Add the oil, thyme, parmesan, garlic powder, salt and ground black pepper.
- Combine until the squash is coated.
- Add the seasoned squash into your air fryer.
- Air fry the squash at 400 degrees F for 8-10 minutes, shaking halfway through. I suggest making this recipe in two batches for even cooking.
- Serve with a sprinkle of thyme and parmesan cheese!

- 1 acorn squash
- 2 tablespoons avocado oil
- ½ tablespoon freshly chopped thyme - Plus, extra for garnish.
- 1 tablespoon grated parmesan cheese - Plus, extra for garnish.
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
Instructions
- First, preheat your air fryer. If your air fryer has a preheating option you can preheat your air fryer. If you don’t have that option, you can run the machine at 400 degrees F for 2-5 minutes. Leave the machine running for about 3 minutes for smaller air fryers. Leave the machine running for about 5 minutes for larger air fryers.
- Now, cut the acorn squash. Slice the squash in half. Next, scoop out the seeds with a spoon. Lastly, lay the squash cut side down and cut into ½ inch half circles.Â
