Why you'll love Vanilla Almond Granola:
- Healthier than store-bought - Many granolas at the store contain lots of sugar and unnecessary ingredients.
- Great for meal prep - You can enjoy this granola for up to 4 weeks after you make it!
- This Vanilla Almond Granola Recipe is the perfect addition to yogurt bowls, smoothie bowls, oatmeal bowls and so much more!
Ingredients and substitutions:
- old fashioned rolled oats - Don't use quick oats or steel cut oats.
- chopped raw almonds - You can use another nut if you don't like almonds.
- melted coconut oil - Swap olive oil or avocado oil if you don't have coconut oil.
- pure maple syrup and honey - The sweeteners for the granola. I like the combination of both. Maple syrup has a deep flavor and honey gives it a nice golden color. You can use all maple syrup, but I don't recommend using all honey because it burns more easily.
- vanilla bean paste or vanilla extract - This is where the vanilla flavor comes from.
- ground cinnamon and salt - Because no granola is complete without a little cinnamon and you always need salt to balance out the flavors.

- Bake at 325 degrees F for 35-40 minutes. Gently stir the granola halfway through and press it back down into an even layer.
- Allow the granola to cool completely before breaking it. It will crisp up as it cools.
- Store the granola in an airtight container in the pantry. It should stay fresh for up to 4 weeks.
Recipe pro-tips:
- Spread the oat mixture into an even layer before baking so it bakes evenly.
- Check on the granola between 35-40 minutes to ensure it doesn't burn.
- You can use all maple syrup instead of the combination of maple syrup and honey. I don't recommend using all honey because it burns more easily.
- Don't break the granola before it cools. You will break up any clusters.
Storage directions:
Store the granola in an airtight container in the pantry. It should stay fresh for up to 4 weeks.
Dietary adaptations:
- gluten free - Use gluten free oats.
- nut free - Swap out the almonds for seeds of choice like sunflower seeds.
- vegan - Use all maple syrup as the sweetener.
Of course, always check to make sure all the products you are using comply with the diet you follow.
