Vanilla Almond Granola

Vanilla Almond Granola is crunchy, chunky and delicious! All you need is 7 simple ingredients to make this homemade granola.

Ingredients
  

  • 2 ½ cups old fashioned rolled oats
  • 1 cup chopped raw almonds
  • cup melted coconut oil
  • ¼ cup pure maple syrup
  • 2 tablespoons pure honey
  • 1 tablespoon vanilla bean paste or 2 tablespoons vanilla extract 
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt

Instructions
 

  • Add all of ingredients into a mixing bowl and mix until combined.
  • Spread the mixture onto a baking sheet lined with parchment paper in an even layer.
  • Bake at 325 degrees F for 35-40 minutes. Gently stir the granola halfway through and press it back down into an even layer.
  • Allow the granola to cool completely before breaking it. It will crisp up as it cools.
  • Store the granola in an airtight container in the pantry. It should stay fresh for up to 4 weeks.

Notes

This recipe yields about 5 cups of granola.
1 serving is ¼ cup.
