Cottage Cheese Egg Bites are easy to make, fluffy and delicious! These bites make a healthy meal prep breakfast.

At this point, I'm convinced that cottage cheese makes everything better. These egg bites have the fluffiest texture thanks to the cottage cheese. Plus, you wouldn't even know it was in there.

How to make egg bites with cottage cheese?

- Preheat the oven to 350 degrees F.
- Prepare a muffin tin with silicone cups.
- Grease the silicone cups with oil spray for easier clean up.
- If you don't have silicone cups, grease the muffin tin very well.
- Crack eggs into a bowl and add cottage cheese, broccoli, cheddar cheese, salt and pepper.
- Whisk all the ingredients well until combined.
- Evenly distribute the egg mixture into each cup. (Spoon about ¼ cup in each.)
- Bake at 350 degrees F for 30-35 minutes or until the eggs are set.
- Wait until the egg bites are cool enough to handle before removing them from the cups and enjoying!
- The bites will deflate a bit when you remove them from the oven.
Recipe pro-tips:
- Use good quality eggs. I personally always purchase pasture raised eggs. I know they are more money, but you can see the quality difference just by the color.
- Make sure the eggs are set by gently pressing the middle of one bite. It should not be liquidy.
- Olive oil spray bottles come in handy for this egg bites recipe with cottage cheese!

- vegetables - red, orange or green bell peppers, spinach, scallion, cooked potatoes, kale or onions
- protein - cooked bacon, cooked turkey bacon or cooked breakfast sausage
- cheese - goat cheese, feta cheese, mozzarella cheese, Gruyère cheese or parmesan cheese
Storage Instructions:
- Fridge - Store egg bites in an airtight container in the refrigerator for 3-4 days.
- Freezer - Store the egg bites in the freezer for up to 3 months. Individually wrap the egg bites in plastic wrap and place them in a freezer bag.

I am about to start making this recipe. I noticed that your instructions for egg bites that numbers 2 and 3 are the same 👨🌾.
I have a question, your instructions indicate that the broccoli should be cooked chopped fine. Why does the broccoli need to be cooked first? Won’t it cook when the bites are in the oven?

I just ate three of these little gems! Love the recipe and thanks for sharing. These are ideal for breakfast because I’m not very good at cooking first thing after crawling out of bed.
