Mexican Cobb Salad with Cilantro Lime Dressing is a flavorful and easy-to-make salad that will be one of your new favorites!

Cobb salads are a classic, but can be a little boring. I wanted to spice up a traditional cobb salad by putting a little twist on it. I added zesty corn, black beans, avocado and crushed tortilla chips. The salad dressing is made with yogurt, lime and cilantro.

Ingredients in Mexican Cobb Salad

  • chopped romaine hearts
  • hard boiled eggs - check out my air fryer hard boiled eggs
  • frozen corn
  • avocado oil
  • spices
  • rinsed and drained canned black beans
  • halved grape tomatoes
  • diced avocado
  • diced red onion
  • crushed blue corn tortilla chips

Ingredients in Cilantro Lime Dressing

  • olive oil
  • plain Greek yogurt
  • fresh Chopped Cilantro
  • juice of fresh lime
  • spices

Some Additions to Add to Mexican Cobb Salad with Cilantro Lime Dressing

  • crumbled queso fresco or feta
  • air fryer shrimp
  • grilled chicken
  • pickled or fresh chopped jalapeño
  • switch out the blue corn tortilla chips for air fryer tortilla chips

Meal prep this salad for work or school. Use these containers! Leave the dressing on the side and pour it over the top when you are ready to enjoy.

Ingredients
  

Ingredients in Mexican Cobb Salad

  • 2 chopped romaine hearts
  • 2 hard boiled eggs - check out my air fryer hard boiled eggs
  • ½ cup frozen corn
  • ½ tsp avocado oil
  • ¼ tsp ground paprika
  • ¼ tsp chili powder
  • ¼ tsp salt
  • ½ cup rinsed and drained canned black beans
  • ¾ cup halved grape tomatoes
  • 1 diced avocado
  • 3 tbsp diced red onion
  • ½ cup crushed blue corn tortilla chips

Ingredients in Cilantro Lime Dressing

  • 2 tbsp olive oil
  • ¼ cup plain Greek yogurt
  • 2 tbsp fresh chopped cilantro
  • juice of one fresh lime
  • ¼ tsp ground paprika
  • ¼ tsp chili powder
  • ¼ tsp salt

Instructions
 

  • Make the hard boiled eggs. I recommend using your air fryer. Check out my air fryer hard boiled eggs. Once they are cooked, slice them and set aside.
  • Now, make the dressing for the salad. Whisk together all ingredients for the Cilantro Lime Dressing in a small bowl until combined. Set aside. You can also use a small mason jar and shake all the ingredients together to combine.
  • Sauté corn in a pan with avocado oil, paprika, chili powder and salt for 4-5 minutes. Set aside.
  • Assemble all ingredients for the salad. Place the romaine, sliced hard boiled eggs, cooked corn, black beans, tomatoes, avocado, red onion and tortilla chips in a salad bowl.
  • Pour the dressing over the top, toss and enjoy!
