Healthy No Bake Peanut Butter Oatmeal Cookies

After the obsession with my 4 Ingredient No Bake Cookies, I needed to make an oatmeal version of the recipe. These cookies remind me of a smashed peanut butter cup with the addition of chewy oats. Oh... let's not forget the flaky sea salt. HEAVENLY! Do yourself a favor and whip up a double batch because these will be gone in no time.

Ingredients in Healthy No Bake Peanut Butter Oatmeal Cookies

  • melted vegan dark chocolate (no added sugar)
  • natural creamy peanut butter
  • melted coconut oil
  • gluten free old fashioned rolled oats
  • flaky sea salt – optional

How to make No Bake Cookies

  1. Mix together melted dark chocolate, peanut butter, coconut oil and oats in a mixing bowl.
  2. Use a 1 ½ tbsp cookie scoop and drop the cookies onto a sheet pan lined with parchment paper. Sprinkle with sea salt, if desired.
  3. Place the sheet pan in the freezer for about 1 hour or until the cookies harden. Store in the freezer and grab a cookie whenever you are craving a sweet treat!

Ingredients
  

  • ¼ cup melted vegan dark chocolate (no added sugar) I love Lily’s Chocolate Chips or Lakanto Chocolate Chips. If you want to purchase some of the chocolate chips from Lakanto’s website, you can use my code “FROZENB15” for 15% off your purchase.
  • ⅓ cup natural creamy peanut butter
  • 1 tbsp melted coconut oil
  • ½ cup gluten free old fashioned rolled oats
  • flaky sea salt - optional

    Do you have nutritional value listed anywhere?

      I purposely do not provide nutritional information because numbers can be triggering for some. I want this to be a safe space for all. If interested, you can type the ingredients into an online calculator and find the nutritional info for any recipe. It’s also much more accurate since we probably use different brands.

    I just made these.. I followed your recipe exactly and I was lucky to get 6 cookies. They are delicious though. Next time, I'll double it because the chocolately, peanutty mess isn't worth only 6 cookies

      You may have used a slightly smaller cookie scoop to get 2 less cookies than the recipe says. 6 is not far off from 8.
