
To begin, this Easy Vegetable Pasta Soup is a healthy and simple meal to make any night of the week. There are no complicated ingredients needed to make this veggie soup recipe. Also, you can add in whatever veggies you have on hand! I personally used beef bone broth to increase the protein and nutritional benefits in this soup. You can use vegetable stock and this would be a vegetarian recipe. Lastly, you could add in some canned beans and call this a version of pasta e fagioli, which is an Italian soup made from pasta and beans. Basically, this recipe is very forgiving and customizable!

Easy Vegetable Pasta Soup
Ingredients
- 3 cloves minced garlic
- ¼ cup diced white onion
- ¼ cup diced carrots
- ¼ cup diced celery
- 1 tsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp paprika
- 1 tsp garlic powder
- ½ tsp dried dill
- ½ cup frozen peas
- 2 cups fresh spinach
- 1 cup canned crushed tomatoes
- 2 ½ cups beef bone broth (feel free to sub veggie stock)
- 1 cup dried whole grain elbow macaroni
Instructions
- Grab a saucepan and sauté the garlic and onion in olive oil for 2-3 min on medium heat. Add the carrots, celery and spices and cook for 5 min. Add in the frozen peas, spinach, crushed tomatoes and bone broth.
- Cover and allow the soup to cook on low for 20 minutes. Remove cover and add in pasta. Raise the heat to medium and cook until the pasta is done (About 8-12 min. depending on the type of pasta you used.)
- When I serve the soup, I personally love to add a sprinkle of parmesan cheese!
