Why you'll love cottage cheese flatbread:
- High in protein - Half the flatbread has 14 grams of protein!
- Low carb - Half the flatbread has 4 grams of carbs!
- Great texture - I was skeptical of this recipe because of the two eggs. I didn't want it to taste eggy. It doesn't at all! It has a texture similar to a flatbread or a flour tortilla wrap.
Ingredients overview:
- 4-5% small curd cottage cheese - Full-fat cottage cheese is better in this recipe because it's less watery.
- eggs - You'll need 2 eggs for this Cottage Cheese Flatbread Recipe.
- Italian herb seasoning, garlic powder, sea salt and black pepper - This seasoning mix gives the flatbread great flavor.
How to make cottage cheese flatbread?
A complete list of ingredients, amounts and instructions is located on the recipe card below.
- Preheat the oven to 350 degrees F.
- Add all of the ingredients to a blender. Blend for 15 seconds.
- Pour the mixture onto a quarter sheet pan lined with parchment paper into an even "squarish" shape. Don't spread it too thin or it will burn.
- I didn't spray my parchment paper and nothing stuck. I saw on social media that some people had issues with it sticking. If you want to play it safe, spray the parchment paper.
- Bake at 350 degrees F for 35-40 minutes.
- Let it cool completely before adding toppings and folding it over or adding toppings and wrapping it like a wrap.
Expert tips:
- Don't spread the mixture too thin or the flatbread will burn and become like a chip.
- Add different seasonings depending on what flavors you're craving.
- Add your favorite sandwich ingredients to the flatbread. I used turkey, cheddar cheese, arugula, olive oil and mustard.
What to put in the flatbread?
- cold cuts and cheese
- chicken salad
- tuna salad
- your favorite salad ingredients

It didn’t say how much cottage cheese to use. In the picture I see what looks to be cup of cottage cheese. I thought you would need more and other recipes add grated parm. I will try a cup of cottage cheese and cup of Parmesan

Of course it says how much cottage cheese to use. That would be very silly of me. Please refer to the recipe card. ⅔ cup 4-5% small curd cottage cheese. 2 cups of cheese is a lot. I don't recommend those ratios. I recommend following the recipe for best results.
