Cottage Cheese Egg Bites

Ingredients
  

  • 8 eggs
  • ¾ cup cottage cheese
  • 1 cup cooked, cooled and finely chopped broccoli 
  • cup shredded cheddar cheese 
  • ¼ teaspoon sea salt
  • ¼ teaspoon pepper
  • 1 spray olive oil spray

Instructions
 

  • Preheat the oven to 350 degrees F. Prepare a muffin tin with silicone cups. Grease the silicone cups with oil spray for easier clean up. If you don't have silicone cups, grease the muffin tin very well.
  • Crack eggs into a bowl and add cottage cheese, broccoli, cheddar cheese, salt and pepper. Whisk all the ingredients well until combined.
  • Evenly distribute the egg mixture into each cup. (Spoon about ¼ cup in each.) Bake at 350 degrees F for 30-35 minutes or until the eggs are set.
  • Wait until the egg bites are cool enough to handle before removing them from the cups and enjoying! The bites will deflate a bit when you remove them from the oven.
