1cupcottage cheese - The higher the fat percentage, the better. Lower fat varieties can make the egg bake watery.
1cupshredded cheddar cheese
2 ½cupschopped fresh spinach
¼teaspoonsea salt
¼teaspoonground black pepper
4spraysolive oil spray
Instructions
Preheat the oven to 350 degrees F. Spray a 9x13 or 9×9 baking dish well with olive oil spray and set it aside.
In a large bowl, whisk all ingredients until combined.
Pour the egg mixture into the baking dish and bake at 350 degrees F for 45-55 minutes. You will know it's done when the center is firm. It should not be jiggly.
Let it cool for at least 10 minutes before slicing into 8 pieces and enjoying.
