Ingredients
  

  • 12 eggs
  • 1 cup cottage cheese - The higher the fat percentage, the better. Lower fat varieties can make the egg bake watery.
  • 1 cup shredded cheddar cheese
  • 2 ½ cups chopped fresh spinach
  • ¼ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • 4 sprays olive oil spray

Instructions
 

  • Preheat the oven to 350 degrees F. Spray a 9x13 or 9×9 baking dish well with olive oil spray and set it aside.
  • In a large bowl, whisk all ingredients until combined.
  • Pour the egg mixture into the baking dish and bake at 350 degrees F for 45-55 minutes. You will know it's done when the center is firm. It should not be jiggly.
  • Let it cool for at least 10 minutes before slicing into 8 pieces and enjoying.
