First of all, this salad has the perfect sweet and salty mix of flavors. The sweetness of the diced apple and the saltiness of the feta pair so well. Secondly, the contrast of textures is ideal for me. I always need a good crunch in my salad and the pumpkin seeds add just that. Lastly, the salad is filled with protein, keeping you fuller for longer!
Pro Tip! Meal prep this salad for lunch during the week. Be sure to keep the dressing separate and pour over the salad right before enjoying. ALSO... If you are taking the salad to work or school, dice the apple in the morning and place it into a separate container with lemon juice. This will prevent it from browning. Add the apple to the salad right before eating.

The secret to this creamy dressing recipe is Greek yogurt. This makes the dressing perfectly creamy without any mayonnaise. If you want a super thick dressing, add a couple more tablespoons of Greek yogurt.

Ingredients
Chicken Harvest Salad Ingredients
- ½ lb thinly sliced chicken breast
- ½ tablespoon avocado oil
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- ½ teaspoon garlic powder
- 4 cups arugula
- ½ diced medium apple
- ¼ cup crumbled feta cheese
- 3 tablespoons thinly sliced onion of your choice
- ¼ cup roasted pumpkin seeds
Creamy Balsamic Dressing Ingredients
- 2 tablespoons plain Greek yogurt
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 2 tablespoons fresh lemon juice
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- ½ teaspoon garlic powder
Instructions
- Make the dressing for the salad. Whisk together all ingredients for the Creamy Balsamic Dressing in a small bowl until combined. Set aside. You can also use a small mason jar and shake all the ingredients together to combine.
- Next, add chicken breast to a bowl and coat in avocado oil and spices.
- Heat a pan to medium. Place the chicken into the pan and cook 4-6 minutes per side or until the chicken's temperature reaches 165 degrees F.
- Transfer the chicken to a cutting board and slice.
- Assemble all ingredients for the salad. Place the arugula, apple, feta, onion, pumpkin seeds and chicken into a salad bowl.
- Pour the dressing over the top, toss and enjoy!
