Ingredients
  

Chicken Harvest Salad Ingredients

  • ½ lb thinly sliced chicken breast
  • ½ tablespoon avocado oil
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ teaspoon garlic powder
  • 4 cups arugula
  • ½ diced medium apple
  • ¼ cup crumbled feta cheese
  • 3 tablespoons thinly sliced onion of your choice
  • ¼ cup roasted pumpkin seeds

Creamy Balsamic Dressing Ingredients

  • 2 tablespoons plain Greek yogurt
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons fresh lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ teaspoon garlic powder

Instructions
 

  • Make the dressing for the salad. Whisk together all ingredients for the Creamy Balsamic Dressing in a small bowl until combined. Set aside. You can also use a small mason jar and shake all the ingredients together to combine.
  • Next, add chicken breast to a bowl and coat in avocado oil and spices.
  • Heat a pan to medium. Place the chicken into the pan and cook 4-6 minutes per side or until the chicken's temperature reaches 165 degrees F.
  • Transfer the chicken to a cutting board and slice.
  • Assemble all ingredients for the salad. Place the arugula, apple, feta, onion, pumpkin seeds and chicken into a salad bowl.
  • Pour the dressing over the top, toss and enjoy!
