3 Ingredient Flourless Peanut Butter Cookies
Put your hands up if you love peanut butter. I am raising my hands and feet! One of my all time favorite foods is peanut butter. If you are a peanut butter lover too, you need to make these cookies. All you need is 3 ingredients – creamy natural peanut butter, one egg and coconut sugar.
IMPORTANT NOTE ABOUT THE CREAMY NATURAL PEANUT BUTTER!
Creamy natural peanut butter is more oily than a generic peanut butter such as SKIPPY®. Ensure the oil sitting at the top of the peanut butter jar is completely stirred and well incorporated. This recipe will not work if the oil is separated.
How do you make 3 ingredient peanut butter cookies?
- Mix together creamy natural peanut butter, one egg and coconut sugar until incorporated.
- Refrigerate the cookie dough for 30 minutes.
- Use a 1 ½ tbsp scoop and drop each cookie dough ball onto a sheet pan lined with parchment paper. First, press and flatten to form round disks. Then, use the back of a fork, making a criss-cross pattern.
- Bake for 8-12 minutes in an oven preheated to 350 degrees.
- Transfer to a baking sheet to cool. They will harden as they cool.

Hi. Can I make the dough a night before? Thank you!
Hi! I haven’t personally tried making the dough the night before. I assume that the dough would get very hard in the fridge overnight. I recommend letting it sit out for a bit before baking.
