3 Ingredient Flourless Peanut Butter Cookies

Put your hands up if you love peanut butter. I am raising my hands and feet! One of my all time favorite foods is peanut butter. If you are a peanut butter lover too, you need to make these cookies. All you need is 3 ingredients – creamy natural peanut butter, one egg and coconut sugar.

IMPORTANT NOTE ABOUT THE CREAMY NATURAL PEANUT BUTTER!

Creamy natural peanut butter is more oily than a generic peanut butter such as SKIPPY®. Ensure the oil sitting at the top of the peanut butter jar is completely stirred and well incorporated. This recipe will not work if the oil is separated.

How do you make 3 ingredient peanut butter cookies?

  1. Mix together creamy natural peanut butter, one egg and coconut sugar until incorporated.
  2. Refrigerate the cookie dough for 30 minutes.
  3. Use a 1 ½ tbsp scoop and drop each cookie dough ball onto a sheet pan lined with parchment paper. First, press and flatten to form round disks. Then, use the back of a fork, making a criss-cross pattern.
  4. Bake for 8-12 minutes in an oven preheated to 350 degrees.
  5. Transfer to a baking sheet to cool. They will harden as they cool.

Yes. Place the cookies into a freezer safe container or freezer safe zip-top storage bag and store in the freezer for up to 3 months.

  • 1 cup creamy natural peanut butter – (make sure oil is completed stirred and well incorporated)
  • 1 egg
  • ¾ cup coconut sugar

Instructions
 

  • Mix together creamy natural peanut butter, one egg and coconut sugar until incorporated.

        Hi! I haven’t personally tried making the dough the night before. I assume that the dough would get very hard in the fridge overnight. I recommend letting it sit out for a bit before baking.

It’s National Peanut Butter Lover's Day! 🎉 #a It’s National Peanut Butter Lover's Day! 🎉 #ad I made some PB&J Truffles using @pbfit powdered peanut butter to celebrate!

Save this recipe & celebrate with me! 💛

Mix together…
- ½ cup @pbfit powdered peanut butter
- ¼ cup almond flour
- ¼ cup oat flour 
- 2 tbsp maple syrup 
- 2 tbsp unsweetened canned coconut milk

Roll into bites and freeze for 30 minutes.

Mix together…
- ½ cup melted white chocolate 
- 1 tsp freeze-dried strawberry powder
- 1 tsp coconut oil 

Remove the bites from the freezer. Coat each in the white chocolate strawberry mixture. Freeze for 30 minutes more.

Optional: Remove the bites from the freezer. Drizzle with more white chocolate strawberry mixture, add a sprinkle of sea salt and a sprinkle of @pbfit powdered peanut butter. Freeze for another 30 minutes before enjoying. Store in the fridge.

Plus, I get to have chocolate for breakfast! I call that a win-win. 🎉 You can enjoy this 4 ingredient oatmeal hot or prep it in advance and eat it the next day as overnight oats. Take your pick! Chocolate Hazelnut Protein Oatmeal
1 cup oats
½ mashed banana
1 Premier Protein Chocolate Hazelnut Protein Shake with Oats (20g of protein, 7g of fiber, 1g of sugar, 24 vitamins & minerals + does not contain nut allergens)
1 ½ tbsp cacao powder 

1. Add all ingredients into a saucepan.
2. Bring the mixture to a boil and then reduce the heat to simmer. Cook for about 5 minutes, stirring occasionally.
3. Serve with toppings of choice. You know I’m always drizzling nut butter. In addition, I added Greek yogurt!

Yields 2 servings

I added @lifewaykefir Coconut Honey into the muffins for added protein, a light and airy texture + the flavor, of course. Have you tried kefir before?

Recipe ⬇️

* 1 ¼ cups whole wheat flour
* 1 cup almond flour
* 2 tsp baking powder (gluten-free)
* ½ tsp vanilla
* 2 eggs
* ¼ cup @lifewaykefir
* ½ cup unsweetened applesauce
* ¼ cup avocado oil
* ⅓ cup honey
* ½ cup dark chocolate chips
* ⅓ cup unsweetened shredded coconut

1. In a mixing bowl, combine all ingredients until well incorporated.
2. Line a muffin tin with 10 liners. Use a ¼ measuring cup and pour the batter into each muffin liner. Bake for 20-25 minutes in a 350 degree oven.
3. Allow the muffins to cool, remove from the liners and enjoy!💛
