3 Ingredient Flourless Peanut Butter Cookies
Put your hands up if you love peanut butter. I am raising my hands and feet! One of my all time favorite foods is peanut butter. If you are a peanut butter lover too, you need to make these cookies. All you need is 3 ingredients - creamy natural peanut butter, one egg and coconut sugar.
IMPORTANT NOTE ABOUT THE CREAMY NATURAL PEANUT BUTTER!
Creamy natural peanut butter is more oily than a generic peanut butter such as SKIPPY®. Ensure the oil sitting at the top of the peanut butter jar is completely stirred and well incorporated. This recipe will not work if the oil is separated.
- Mix together creamy natural peanut butter, one egg and coconut sugar until incorporated.
- Refrigerate the cookie dough for 30 minutes.
- Use a 1 ½ tbsp scoop and drop each cookie dough ball onto a sheet pan lined with parchment paper. First, press and flatten to form round disks. Then, use the back of a fork, making a criss-cross pattern.
- Bake for 8-12 minutes in an oven preheated to 350 degrees.
- Transfer to a baking sheet to cool. They will harden as they cool.

Hi! I haven't personally tried making the dough the night before. I assume that the dough would get very hard in the fridge overnight. I recommend letting it sit out for a bit before baking.

I was wondering if I could try making these with leas sugar , or would that mess with the consistency considering there aren’t many ingredients ? Also, would you say these are on the sweeter side? Or mildly sweet? Thank you!

I already reduced the sugar compared to a traditional flourless cookie recipe. Also, this recipe calls for coconut sugar over cane sugar. The texture would be off if the sugar was reduced more for this recipe. I would say they are just right for me personally.

I never baked cookies in the air fryer so I'm not sure. You could def throw some chocolate chips in!
