Plain yogurt or Greek yogurt can be used in tuna instead of mayo. Extra virgin olive oil in place of mayo is even more tasty! That's what we're using in this recipe.

- canned tuna in water, drained
- yellow onion or red onion, minced
- cherry tomatoes, cut into fourths
- capers, finely chopped
- kalamata olives, finely chopped - You can also use black olives or green olives.
- extra virgin olive oil - Good quality extra virgin olive oil is key!
- fresh lemon juice - I always recommend using fresh lemon juice opposed to bottled.
- salt and pepper - You don’t need too much salt because capers and olives are salty.

First, add the drained tuna to a bowl.
Use a fork to flake the tuna.
Place the other ingredients into the bowl and combine.

I served mine over a toasted piece of sourdough with some arugula. I also added an extra drizzle of extra virgin olive oil and cracked black pepper.

Good quality extra virgin olive oil is crucial for this recipe. Whenever I visit Europe, I bring back lots of olive oil. I used olive oil from Spain for this recipe. Some brands that I love from the United States are Cobram Estate and Graza. You can purchase these from major grocery stores or Amazon.

- 1 tablespoon capers, finely chopped
- 1 tablespoon kalamata olives, finely chopped
- 3 tablespoons extra virgin olive oil
- 1 tablespoon fresh lemon juice
