Ingredients
  

  • 8 ounces canned tuna in water, drained - I used two 4 ounce cans.
  • 3 tablespoons yellow onion or red onion, minced
  • cup cherry tomatoes, cut into fourths
  • 1 tablespoon capers, finely chopped
  • 1 tablespoon kalamata olives, finely chopped
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 pinch salt and pepper  - You don’t need too much salt because capers and olives are salty.

Instructions
 

  • First, add the drained tuna to a bowl. Use a fork to flake the tuna.
  • Place the other ingredients into the bowl and combine.
  • Serve the salad as you would like! Serve the tuna salad on bread, with crackers or over a bed of greens. I served mine over a toasted piece of sourdough with some arugula. I also added an extra drizzle of extra virgin olive oil and cracked black pepper.
