8ouncescanned tuna in water, drained- I used two 4 ounce cans.
3tablespoonsyellow onion or red onion, minced
⅓cupcherry tomatoes, cut into fourths
1tablespooncapers, finely chopped
1tablespoonkalamata olives, finely chopped
3tablespoonsextra virgin olive oil
1tablespoonfresh lemon juice
1pinchsalt and pepper - You don’t need too much salt because capers and olives are salty.
Instructions
First, add the drained tuna to a bowl. Use a fork to flake the tuna.
Place the other ingredients into the bowl and combine.
Serve the salad as you would like! Serve the tuna salad on bread, with crackers or over a bed of greens. I served mine over a toasted piece of sourdough with some arugula. I also added an extra drizzle of extra virgin olive oil and cracked black pepper.
