No Bake Almond Butter Energy Balls (Gluten Free) are filled with almond butter, oats, coconut and dark chocolate chips! These bites are the perfect healthy meal prep snack.

You just can't beat these energy balls! These are absolutely delicious and super easy to make. I highly recommend prepping a batch in the beginning of the week to enjoy all week long. Grab one or two of these bites to enjoy as a snack or dessert.

Ingredients in this recipe

  • gluten free old fashioned rolled oats
  • honey
  • creamy drippy almond butter (Ensure it's nice and drippy. If it's thick and lumpy, it will not mix well.)
  • cold water 
  • unsweetened shredded coconut
  • dark chocolate chips

No food processor needed for the recipe!

  1. Combine all ingredients in a mixing bowl.
  2. Roll the mixture into balls.
  3. Place the balls into the fridge for 1 hour to harden before enjoying.
  4. Store in the fridge.

Store these balls in an airtight container in the fridge for about 1 week.
